Tennessee Cornbread

1-1/2 cups white self-rising cornmeal
1/2 cup self-rising flour
1/4 cup sugar
1 egg
2 tablespoons melted shortening or bacon fat
3/4 cup buttermilk
Preheat the oven to 450 degrees. Grease an 8-inch iron skillet. Mix well all the ingredients together. Pour into the skillet. Bake for about 20 minutes or until brown on top.

If some of this bread is crumbled up and dropped into a glass of buttermilk, it is like eating good ice cream.
NOTE: The reason for the self-rising cornmeal and flour is because salt and soda are not required.
Hushpuppies
Use the same ingredients as in the cornbread and add 2 onions, chopped
Mix all ingredients together and drop from a spoon into a pan of hot fat; turn once and remove when they are brown. The hushpuppies will cook in about 5 minutes. Let them cool in a plate on paper towels. Dip your spoon into a nearby glass of cold water after you make a drop and the next drop will not stick to your spoon.
