SWEET AND SOUR PORK

1-2 tablespoons melted shortening
20 ounces pineapple chunks
1/2 cup vinegar
3/4 cup water
1 tablespoon soy sauce
1/4 cup firmly packed brown sugar
1/2 teaspoon salt
1 tablespoon cornstarch
2 tablespoons water
1/3 cup thinly sliced onion
1 green pepper cut in thin strips
Cut meat in strips, 3 or 4 inches long, 1 inch wide. Saute in shortening until light brown. Drain. Drain pineapple, reserving juice. Combine juice, 3/4 cup water, vinegar, soy sauce, brown sugar and salt. Pour over meat and simmer until tender. Combine cornstarch and 2 tablespoons water. Add to meat, cook over low heat turning constantly until sauce is thickened. Add pineapple chunks, onion, and green pepper. Cover, simmer 1-15 minutes. Serve over rice. Serves 4-6.
