Easy Sweet Potato Casserole

This recipe is as easy to make as falling off a log while walking across Saw Creek, which runs parallel with the Railroad Bed Pike in Lawrence County , Tenn.
I fell off the log a few times in the cold winter water. You will notice that this recipe has no spices or marshmallows, allowing you to fully appreciate the complex flavors of the potatoes.

3 cups mashed sweet potatoes (baked or boiled)

1/2 cup (1 stick) butter

1 cup sugar

1 teaspoon vanilla

Mix the 4 ingredients and put in a casserole dish.

Topping:

1 cup brown sugar

1/2 cup flour

1/4 cup (1/2 stick) butter

1 cup chopped pecans

Combine topping ingredients until crumbly and sprinkle over casserole. Bake at 350 degrees until topping is golden brown.
