Who Needs the Pizza Man?

You can call a pizza man and be ripped off. You can make your own pizza better than you can buy. A pizza consists of three things: the flour mixed with a liquid and kneaded, the sauce, and the topping. The key to making a great pizza is the sauce. Children have a ball making this for their parents and friends.
Tomato Pizza Sauce
2 tablespoons olive oil
1 Spanish onion, minced
2 garlic cloves, chopped
3 tablespoons tomato paste
28 ounces canned plum tomatoes, blended smooth
1/2 teaspoon salt
1 bay leaf
2 tablespoons basil, chopped
1/4 cup oregano, chopped
1/2 teaspoon granulated sugar
In a small saucepan. Heat oil over medium heat. Stir in onion and saute' until translucent, approximately 2 minutes. Stir in garlic and saute' until vegetable is wilted, approximately 1 minute. Add tomato paste and cook, stirring constantly for 30 seconds. Add blended tomatoes into the saucepan. Stir in salt, bay leaf, basil and oregano. Simmer, stirring occasionally, until sauce is thickened, approximately 20- 30 minutes. Remove bay leaf, and adjust seasoning with sugar.
