Dry Rubs
My friend Betty, who lives in Mississippi, sent the following Dry Rubs recipes.
These are dry rub recipes from an issue of a KY tourist magazine.
For Turkey
2 t. chili powder
1 t. ground cumin
1 t. dried oregano
1 t. garlic powder
2 t. onion salt
1/4 t. ground allspice
1/4 t. cayenne pepper
2 T. olive oil
2 T. fresh lime juice
Mix dry ingredients. Rub turkey with olive oil & lime juice. Rub with dry rub & roast until internal temp reaches 165 F. Allow to sit, covered with foil for 30 minutes before carving.
Memphis-Style Dry Rub for Chicken or Ribs
1/4 C. paprika
2 T. brown sugar
2 t. granulated sugar
2 t. salt
1 t. celery salt
1 t. black pepper
1 t. dry mustard
1 t. onion powder
1 t. garlic powder
1 t. cayenne pepper
4-5 lb chicken: rub inside & outside, and then grill.
3-4 lb pork ribs: coat before grilling.
Steak Dry Rub:
2 T. chili powder
2 T. garlic powder
1 T. + 1 t. cayenne pepper
1/2 t. salt
1/2 t. black pepper
2 T. dried basil
2 T. dried oregano
Will coat 12-16 oz ribeye. Pat well with mixture, making sure entire steak is covered. Grill over hot coals.
Beef Brisket Dry Rub
2 T. garlic powder
1/2 C. paprika
3 T. coarse salt
2 1/2 T. black pepper
3 T. sugar
1 T. chili powder
Will coat 7-8 # brisket. (Do not use a corned beef brisket. Coat entire brisket and cover with plastic. Chill 8 hours, preferably overnight. Use favorite BBQ sauce to mop while cooking. Cook over coals or in oven. Refer to cookbook for time.
London Broil Dry Rub
3 T. brown sugar, packed
1 T. black peppercorns
1 T. yellow mustard seeds
4 t. garlic powder
1 T. whole coriander seeds
1 t. salt
Mix all in small bowl. Place all in a food processor and process until crushed. Rub beef with oil and pat with dry rub mix. Will coat a 2# steak.
Tastes Like You Grilled 'Em Babyback Dry Rub
1 T. sugar
1/2 T. salt
2 t. ground cumin
1 t. ground coriander
1 1/2 t. cayenne pepper
2 t. chipotle powder
1 t. black pepper
Parboil 2 slabs of babyrack ribs for 30 min over med heat. Remove and place on roasting rack. When cool enough to handle, rob all over with dry rub. Do not cover. Cook slowly in a 300 F. oven for 2 hours. Remove from oven, cover lightly with foil, and let sit for 20 min.
