CHINESE PEPPER STEAK
2 pounds London Broil or similar steak
4 tablespoons oil
1/2 cup chopped onion
2 cloves minced garlic
4 bell peppers thinly sliced
1/2 cup celery
1-1/2 cups beef broth
2 tablespoons cornstarch
1/4 cup water
2 tablespoons soy sauce
Boiled rice
Chow Mien noodles
Cut steak in bite-size narrow strips. Brown in oil, then add onions, garlic, pepper and celery. Cook only until vegetables begin to soften, usually about 3 to 5 minutes. Add the beef broth. Mix the cornstarch, water and soy sauce until smooth. Stir into mixture, and continue stirring until mixture reaches boiling. Serve over hot rice, top with Chow Mien needles. Serves 6-8.
