Wilted Romaine Salad

If you have a taste for Italian food. If you like Caesar salads, you'll love this warm variation.
6 cups bite-size pieces romaine lettuce
1/2 cup chopped mushrooms
2 tablespoon red wine vinegar
1 teaspoon anchovy paste
1 large red onion, chopped
6 tablespoons olive oil
1-1/3 cups toasted croutons
Freshly ground black pepper to taste
1. Combine the lettuce and mushrooms in a glass or ceramic salad bowl; set aside.
2. Beat the vinegar and anchovy paste in a small mixer bowl until smooth; set aside.
3. Sauté the onion in the olive oil in a large skillet over medium-high heat just until wilted. Add the croutons, tossing a few times to coat. Remove from heat. Stir in the vinegar mixture.
4. Pour the dressing over the lettuce mixture, tossing gently to coat. Season with the pepper. Toss and serve immediately.
